Woodhull: Homemakers gearing up for centennial celebration

Greensburg — Decatur County was well represented at the Madison District fall meeting last week.

Our state President, Cricket Brown, and Vice President Joanna Sell were there to give us all the news that is going on at the state level. Big plans are in the works for our 100th Anniversary which will be culminated at Home and Family next June at Purdue. You are going to hear a lot more between now and then about all that is going to happen.

I do hope you plan to attend, if not for the entire conference, at least for the big gala celebration where there will be a lot of dignitaries from our past.

Tickets are now being sold for our 100th Anniversary quilt. Each club President was given a packet to sell before November. If your club runs out, more are available. I have a picture I took at this year's Home and Family that you might borrow if you would like.

Our next activity here is our annual Madison District Retreat, which will be Sept. 19 and 20.

It will be at camp Higher Ground in Dearborn County. It is where our 4-H'ers go to camp, so maybe one of them can tell you what a nice place it is.

There will be educational programs, as well as skits, crafts, good food, the auction, bingo and good conversation. Our rooms are just like staying in a hotel, complete with TV, if you have time to watch it.

Something extra for those of us who like to quilt, or just to look at people making quilts, is a group of quilters from Cincinnati who are there for a retreat.  We have almost gotten to know them personally. Get your reservation made right away.

Some days it almost feels like fall is in the air. I predict we will have an early fall this year. I don't have any scientific knowledge; I just believe we will. It sounds like the remnants of Isaac will be here by the end of the week to spoil our holiday. Let's just hope there are no bad storms. We need the rain so badly. My bones will be telling me about it a day before it gets here.

Here are some recipes:

Broccoli-cheese casserole

4 tablespoons margarine

1 small onion, finely chopped

1 bag frozen, chopped broccoli

2 cans cream of chicken soup, undiluted

1 26-ounce jar cheese

2 cups instant rice

 Preheat oven to 325 degrees. Brown onion in margarine. Crumble and separate broccoli as you add it to onion mix. Stir until broccoli is semi soft, 3 to 5 minutes. Add soup and stir until well mixed. Add cheese and stir until melted. Add rice and stir. Place in 3-quart casserole dish, and bake, uncovered for 45 minutes.

Swedish casserole

6 - 8 medium potatoes, cooked and sliced

2 large onions, sliced

5 hard-cooked eggs, sliced

3/4 stick butter

Preheat oven to 350 degrees. In skillet, melt butter, add onions and sautŽ until transparent.  In baking dish, layer potatoes and onions. Repeat layers.

Topping:

2 cups grated sharp cheese

2 cups sour cream

3 tablespoons flour

1 teaspoon paprika

Mix cheese, sour cream and flour together. Spread over potato mixture. Bake in oven 20 to 25 minutes or until heated through. Remove, stir until mixed well. Sprinkle paprika on top. Serve hot.

Chicken parmesan

4 boneless, skinless chicken breasts

1/2 cup dry bread crumbs

1/2 cup Parmesan cheese

1 beaten egg

2 tablespoons margarine

Green bell pepper, sliced

1 pound jar spaghetti sauce

4 ounces Mozzarella cheese, sliced thin

Combine crumbs and cheese. Dip chicken pieces in egg and heavily coat in crumb mixture. Cook chicken in margarine in skillet until golden brown. Place peppers on filets. Pour spaghetti sauce over all. Reduce heat and simmer for 20 minutes or until tender (should not be pink.) Top with mozzarella. Cover and heat until cheese melts.
