Homemakers readying for Fair


Greensburg — Zucchini

1 pound sliced zucchini

1 cup chopped celery

1/2 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon basil

1/8 teaspoon thyme

Dash garlic powder

1 8-ounce can tomato sauce

Combine and bake at 350 degrees for 30 - 35 minutes or Microwave 15 to 18 minutes. Low calorie.

Garden Zucchini

4 cups diced zucchini

1 medium onion, diced

1 small tomato, diced

1 green pepper, diced

1 cup biscuit or pancake mix

1 cup grated cheddar cheese

1 teaspoon salt

Dash of pepper

1/4 teaspoon sweet basil

3 tablespoons chopped parsley

3 eggs

2/3 cup cooking oil

Mix all ingredients except eggs and oil.  Place in very lightly greased baking dish. Beat eggs in oil and pour over mixture in baking dish. Bake, uncovered, at 350 degrees for 45 minutes.

Zucchini Casserole

4 cups zucchini, sliced

2 cups water

2 eggs

1 cup mayonnaise

1 cup chopped onion

1/4 cup green pepper, diced

1 cup cheddar cheese

Salt and pepper to taste

Bring water to a boil and add zucchini.  Cook for 5 minutes.  Drain.

Beat eggs; stir in mayonnaise, onion, green pepper, and cheese. Salt and pepper to taste. Pour over zucchini in a casserole dish. Dot with butter and

sprinkle with bread crumbs. Bake for 30 minutes at 375 degrees. May also be put into a deep pie shell before baking for a delicious quiche'.
