Wasn't it a wonderful fair?

---- — The Extension Homemakers were very busy during fair week with all their activities.

I want to thank all the exhibitors. You did a super job as always. I hope you did not miss all the beautiful handiwork, photos, sewing,and exhibits from DSI and some of the nursing homes. It is always great to see the work they do.

Of course we don’t want to forget the beautiful flowers we had this year as well as the good garden exhibits. You could tell we had more rain this year.

Then there is always the wonderful baked exhibits and the canning and jellies.

Again this year we auctioned off the champion food exhibits and many of the other food exhibits. We made more than $400 on the auction. We will again donate the money to Hospice and New Directions as well as the money made on the Pie Eating Contest which was well over $600.

I want to thank all the ladies we helped at the fair with checking in exhibits to those who helped with the various contests and other events. The fair would not be the success it is without everyone’s help. We also stuffed more than 300 Puppy Pillows for Riley Hospital.

Some of the ladies also helped along with the Junior Leaders who helped with the Decatur County Fair Food Drive. All the canned food went to Human Services and Bread of Life.

I would also like to thank the Daily News for all their articles in the paper. You did a great job.

Here are a couple of the recipes winners from the Tasty Tomato contest:

Green Tomato Pie

Fill an unbaked pie shell with very thin sliced green tomatoes. Remove seeds if you wish, then mix one cup of white sugar, 1/2 cup brown sugar , 2 T. flour, 4 T. vinegar, 1 T. butter and 1 tsp. cinnamon. Pour over tomatoes. Put on top crust and bake at 425 degrees for 15 minutes and at 350 degrees for 30 to 40 minutes. You may use frozen or refrigerated crust to save time.

Tomato Pie

1 baked pie crust

6 large tomatoes, sliced 1/2 inch thick, peeled and drained

8 fresh basil leaves, finely chopped

1 c. fresh mozzarella cheese, sliced

1 onion ,sliced

1 c. mannoise

1 c. grated sharp cheddar cheese

salt and pepper

3 slices bacon, crumbled

layer tomatoes onion and basil, top with slices of mozzerella cheese. Combine mayonnaise and cheese ,spreading on top. Add bacon and bake at 350 for 35 min.

Be sure to drain tomatoes and also may remove seeds.

Tomato Spice Cake

1 103/4oz. tomato soup

1/2 can water

1 c. sugar

1 tsp. cinnamon

1 tsp. soda

1/2 c. nuts

1/2 cup oil

2 c. flour

1 tsp. alspice

1 tsp. vanilla

1/2 c. raisins

thoroughly mix all ingredients together. Put in greased 9 by 13 pan. Bake at 350 degrees for 25 to 30 min.

Glaze:

3/4 c. brown sugar

3 T. milk

2 T. butter

in a small saucepan mix ingredients. Bring to full rolling boil. Stirring constantly Pour over hot cake.

Well, now that the fair is over I must get to my green beans and peaches.
