Activity for Decatur County Extension Homemakers Club is beginning to pick up now that spring is just around the corner.
First of all, our Madison District Spring meeting will be March 11 at Versailles Baptist Church. If you wish to attend, send $10 to Janet Bedel.
We will be hearing from our state officers who will be telling us what is going on at the state level. I’m sure the most important thing will be our 100th Anniversary of IEHA that will take place at Home and Family at Purdue in June. I have been in on some of the activities that will be taking place then, and it sounds like some very interesting things will take place.
Our International Night will be April 11 at First Baptist Church. We will be visiting the Dominican Republic. Complete details will be announced later. This will also be our cultural arts exhibit. Get your projects finished so you can bring them for display. The winner chosen by popular choice vote will represent the county at Home and Family.
Another date to mark on your calendar is May 7. That will be our Century Celebration Tea at First Baptist Church. This will be our local celebration of our 100th anniversary as homemakers. High Tea will be served at 6 p.m., and the speaker will be Jan Hubbard who is a native of England. She will tell us about the custom of the tea celebration. Your $5 reservation for this should be sent to Janet Bedel, 7875 E. County Road 200 N, Greensburg, IN 47240.
I heard the crocus are blooming and this is a sure sign that Spring is on its way. Mine are up, but I don’t see any blooms yet. The robins are back, too. They were here on the coldest morning we’ve had so far, but I didn’t see them for very long. They disappeared as quickly as they came, and were back again last week and had a little warmer reception. The way the forecast sounds, they may have to leave again by the weekend.
How about some casseroles to make your meal planning a little easier for the weeks ahead?
Sweet and sour meatballs
2 pounds hamburger
1/2 cup water
1 envelope onion soup mix
1 16-ounce can sauerkraut, drained
3/4 cup water
1/2 cup brown sugar
8 ounces cranberry sauce
3/4 cup chili sauce
Mix hamburger, 1/2 cup water, eggs, and onion soup mix. Shape into small balls and brown; drain. Mix rest of ingredients and spread in baking dish; leave some for top. Place meatballs on top; add rest of mixture over top. Bake at 325 degrees for 20 minutes (covered) and 15 to 20 minutes (uncovered).
2 pounds carrots
1/2 pound American cheese
1 stick butter or margarine
4 to 6 saltines, crushed finely
Clean, thinly slice, and cook carrots until tender. Drain and place in casserole. Melt cheese and butter together; pour over carrots. Sprinkle crushed crackers over top of carrots. Heat in 400-degree oven until cheese bubbles. This casserole is good even when cold. Note: You may use 1/2 cup shredded cheddar cheese and 12 crushed round butter crackers instead of the American cheese and Saltines.
1 cup chopped onion
1 green pepper, chopped
2 tablespoons butter
1 1/2 pound hamburger
1/2 teaspoon pepper
1 teaspoon salt
1 tablespoon sugar
1 quart whole tomatoes
1 15-ounce can tomato sauce
2 cups water
1 8-ounce package uncooked noodles
Saute’ onion and green pepper in butter for three minutes. Add hamburger, salt, pepper, and sugar; stir in whole tomatoes and sauce and water. Bring to boil and simmer 15 minutes; meanwhile, cover bottom of 13 x 9-inch pan with uncooked noodles; cover noodles with meat mixture, being sure to cover all noodles. Bake, covered, in a 350-degree oven for 45 minutes. In the last few minutes, top with cheese and place back in oven until melted.
